Veggie/Lentil Tacos

I started making Lentil and Veggie Tacos after seeing this recipe on Pinterest. I have never actually followed this recipe but I thought it was only fair that I included the link in this post since I did not actually think up lentil tacos on my own! Giving credit where credit is due! 

To start, I don't buy packaged taco seasoning mix, I make it from scratch using this recipe. It's very simple and you just might have all of the spices you need in your cupboard. It's really good and doesn't have any additives or loads of sodium like the store bought envelopes. I follow the recipe exactly but I quadruple it (and then some) so that I end up with a large spice jar full. I use it pretty often. I also add dried onions.     

For my version of lentil tacos, I just wing it!
  • Lentils-I buy red (orange) and green and usually use half and half. I'll throw about 1/2 cup of each in a saucepan with 2 or 2 1/2 cups of water. I add a hefty spoonful of taco seasoning, bring to a boil and then let simmer for about 20 minutes, stirring now and then. I usually cook them until the water is absorbed but you want to be careful not to scorch them. It's almost easier to just run the mixture through your strainer so they're not too soggy for the tacos. When I make burritos I don't strain them bc I like them to be a little more moist. There are no rules here! I also add diced, sautéed mushrooms to the lentils while they're simmering to give it a little "something extra". 
  • Veggies-Slice 2 portabellos and 2 bell peppers (I used red pepper on this night) and saute them in some olive oil. Sprinkle a little salt and pepper and them cook until the peppers are soft, about 10-15 minutes. 
  • Shredded Cheese
  • Black Beans
  • Taco Shells-Sometimes I cheat and buy organic hard shells from WF or TJs. Otherwise I buy tortillas and make my own shells in the oven
  • Salsa!
Throw everything into a taco shell and enjoy! 

I use taco seasoned lentils in place of traditional taco meat all the time. I've made tacos, burritos, quesadillas and tostados with them. My husband has made nachos with leftover lentils and black beans-REALLY GOOD! The options are endless! You can use the taco seasoned lentils any way you'd like. They're much cheaper than meat and incredibly healthy! My family devours them! Leave your comfort zone and give them a try!!!
