Salmon Croquette, Roasted Cauliflower and Quinoa

After finding this recipe on Pinterest for Salmon Croquette I decided to give it a try. I made the cakes exactly according to the recipe although I did not make the romesco sauce. Instead, I served the salmon alongside a spoonful of homemade ranch dressing. I keep this ranch seasoning mix (by my favorite blog, 100 days...) on hand and mix it with plain greek yogurt on demand. My husband LOVES this dressing. It was a great compliment to the main dish. I also made roasted cauliflower and quinoa as sides. 

This recipe for roasted cauliflower is simple and SO DELICIOUS. I don't love or hate cauliflower. It tastes like nothing to me. I use it in a lot of dishes but other than it's nutritional value, I am completely impartial! This recipe for cauliflower has given me a new fondness of the veggie. Seriously, try it. It's really easy and so-so-good! 

As for the quinoa, I always have this on hand and love how easy (and quick) it is to whip up. I just bring 1 cup of quinoa and 2 cups of water to a boil and then let it simmer on low for about 10-15 minutes-until the water is absorbed. Stir it now and then so it doesn't scorch and stick to the pan. I have to admit that I sprinkle a little bit of soy sauce on my quinoa though my husband and kids eat it plain. We all love it!
